baked potatoes for a banquet

02/02/06 		I am serving baked potatoes for a church banquet. How early can the potatoes be washed and wrapped? Can they be baked ahead and kept warm in roasters? How long before banquet can they be baked with out ruining the potatoes? Thanks.

02/03/06 		They can be washed and wrapped a day or two ahead, but do not refrigerate the raw potatoes, it slows cooking and changes the taste. Most volume restauarnts will not hold over 1 hour after baking, the flavor starts to change. An option- way more work, but can be done ahead and hold better- is twice baked potatoes.
