Can you use canned carrots to make souffle if so how many cans will i need to serve about 75 people?

Yes, but they lose sweetness, consider using fresh carrot juice, now widely available, for part of the liquid.

A 2 quart dish, which uses 2 cans or 1 3/4 pounds of carrots, 3 eggs, 1/2 -1 cup sugar, 1/3-1/2 cup butter, 3 tablespoons all-purpose flour, 1 teaspoon baking powder, 1 teaspoon vanilla extract, spice to taste, easily serves 6.
