Hi Ellen,
I am planning an Anniversary Party for 75-100 people. I will be serving 2 types of shredded turkey sandwiches (bbq & creamed with cheese), calico baked beans, coleslaw (using a coleslaw mix & homemade dressing), vegetables (carrots, celery, cucumbers, cauliflower & broccoli) & dip (homemade, it makes about 3 cups). How much should I purchase/make? And, do I need to serve anything else with it?

This is a good start, still, since it is a party, you may want to fill it out a bit

2 types of shredded turkey sandwiches (bbq & creamed with cheese), 1 pound whole turkey makes 1 cup meat, 1 cup meat makes 4 self serve sandwiches, 5 thinner. Can't suggest the split, you know people in the region better than I do. Adults, 4 adults eat 5 full rolls or a dozen slider rolls.

Sliced sandwich cheese, 1 pound per 15

calico baked beans, 8 pounds dry beans per 100- make one crock pot meatless for any vegetarians.

coleslaw (using a coleslaw mix & homemade dressing), 20 pounds veggies per 100

vegetables (carrots, celery, cucumbers, cauliflower & broccoli) & dip 1 pound veg per 10, 1 pint dip per pound

Yes, I would definitely suggest a starchy salad; potato, pasta, rice, quinoa, couscous. 3-4 gallons

Maybe also chips, 1 pound per 12-15, 1 pint salsa or dip per pound
