3 meats is a lot for 60 people, if you make enough for everyone to have his/her first choice, you will have some leftover meats.

About the appetizers Rice balls, 2 per person spinach salad, 4 pounds spinach eggplant park, parm? 2 bites per person, but I would move this to dinner and make about 12-14 pounds of eggplant cheese and crackers, 1 pound cheese per 12, 4 pounds crackers, 2 quarts olives and small crisp pickles |
