Hi Ellen,
I am making jambalya for 40-50 people and I would like to know if I can make it ahead of time and freeze it.

Frozen and reheated, jambalaya is definitely not party quality food, especially with shrimp. The rice is mushy. the shrimp make everything fishy and shred apart. Always best day of.

If you feel you must do this, make and freeze the base, no rice, no shrimp. Thaw in refrigerator. Cook in the rice and add the shrimp day of the party. Then be sure you eat/ take out all the shrimp before refrigerating any leftovers.
