Light reception for 275-300 people

We are doing a light wedding reception. Menu is tortilla roll ups, veggie tray, fruit tray, cheese and cracker tray. ( plus cupcakes) How much of each of these would be sufficient?

What time is the wedding, what time is the reception, and how long will it last? Is alcohol being served? Write back.

The ceremony begins at 2 pm, but we have people coming from central time so they will feel like it's 1 pm. We don't have a set time for ending the reception. No alcohol is served. The original plan was just cake and punch, and now it has gotten more complex. We'll be feeding bridal party and family that are taking pictures a lunch between 12-1, so this reception is intended to be light. Thank you for your help!!

OK, a nice tea party type reception, as the guests will have eaten lunch.

tortilla roll ups, 4 bites per person, some meatless
veggie tray, use veggie tray page, 1 pound per 12, 1 pint dip per pound. Consider doing 3 classic relish trays as part of the veggies, straight veggies for just 150-200.
fruit tray, use fruit tray page, 1 pound per 10, 1 pint dip per pound
cheese, 1 pound per 10-12 some can be logs or spreads
crackers, 6 pounds per 100

cupcakes, 1 flavor, do 1 per person plus a few extra. 2 flavors, do 60% of each- some people will take one of each.

Consider adding nuts (6-8 pounds per 100) and mints or other small candies (4-6 pounds per 100).
