How much corned beef and cabbage, (carrots and onions included) would I need to cook for 250 people? Good budget and don't mind taking leftovers to the mission. I need a can't fail estimate, all tradesmen and their families, usually good eaters!!! |

If this is self serve, allow 120 pounds of raw corned beef or at least 85 ready to serve. 18-20 pounds carrot, 30-35 potato per 100. 3 pints assorted mustards per 100. Good rolls or breads, including rye bread, 12-14 pounds per 100. 1 gallon pickles per 100. A side dish of either slaw or sauerkraut? 2- 2 1/2 gallons per 100. With this many people you will have some non-meat eaters. Consider 2 crock pots of vegetarian sausages, Field Roast is a great brand, to accommodate.
