Hi,..

We are putting together a fund raiser for JROTC. We are making 600 plates. We are making 600 Hamburgers. How much veggies do I need?

Assuming lettuce, tomato, onion, pickle. This is what the Army does for 100 patties:

LETTUCE,ICEBERG,FRESH, Shredded, 3 lbs
TOMATOES,FRESH,SLICED 6 1/2 pounds (I use double, I like 2 slices per burger)
ONIONS,FRESH,thin SLICED 3 pounds (I soak a few hours or overnight in sugar water in the fridge for crispness)
PICKLES,DILL CHIPS 3 1/8 pounds, about 2 quarts
CATSUP 3 1/3 pounds, about 2 quarts
MUSTARD,PREPARED 1 1/8 pound, about 3 cups

On each burger, spread 1 teaspoon mustard on bottom bun and 1 tablespoon catsup on top bun. Add 2 slices onion, 1 lettuce leaf, 1 slice tomato, and 2 slices pickle on bottom bun.
