I am so sorry but I didn't know how to get back to my original question. I have the same menu. But I had forgot to add the desserts. Okay I am having a baby shower for 80 people. How many pans would I need to feed that many people? How much chicken wings I need to feed that many people? How much oil and what is the best oil to use to fried chicken wings? How much flour I need to cook the amount of wings I need? The pin wheels I don't recall how much deli meats and cream cheese tortillas shredded cheese I need to make for 80 people ? How many cupcakes I need too please?

Baby shower need help
Hello I got lost I don't know how to get back to see if you responded back . I am so lost I wanted to thank you for your help. I wanted to know how many pans I needed for each items. I am having Chicken wings, I choose the mastaccoilii pin wheels ham, enchiladas she wanted so bad. Salad bar. Can you please help me. Also I forgot about the cupcakes pop cakes and cookies how many dozens we need for 80 peoples

OK. Do I understand that your menu is now

enchiladas, do 2 full pans
sour cream, for topping, 6-7 pounds
mostaccioli, do 2 full pans

pin wheels ham, about 3 bites (1/2 tortilla) per person, do this recipe 3 times

Chicken wings
Strongly suggest you do oven baked, not fried. You can still get crispy, here is how. About 30-40 pounds, 300 pieces; people eat a lot of them.

A pound of chicken wing pieces will have 7-12 pieces depending on the wing size, serves 2 people, and costs about 2.25. A pound of legs has about 4 legs, serves 2 people, is juicier and costs under a dollar. Consider legs as the new appetizer alternative.

Prep oven and pan
Line pan with foil, place rach on pan, spay with non-stick spray.
Place oven racks in upper-middle and lower-middle positions.
Preheat the oven to 250 degrees
Place tray on the lower middle oven rack and bake for 30 minutes.
Move wings up to the upper middle rack and increase the oven temperature to 450 degrees. Bake for 40 - 50 minutes, rotating the tray halfway through. Then remove from oven and let stand 5 minutes before serving.

Make coating mix
Here is a sample flour mix for 20-30 pieces:
2/3 cup flour
2 tablespoons smoked paprika
2 teaspoons garlic powder
2 teaspoons black pepper
1 teaspoon salt
1 teaspoon cayenne pepper

Put it in a baggie and shake well.

Here is a bread crumb mix for 20-30 pieces:
1 cup grated Parmesan cheese (such as Kraft®)
1 cup seasoned bread crumbs (panko style oriental are crispest)
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon ground black pepper

For 30 pieces, a stick (8 tablespoons) of butter if you wish to use it.

Prep chicken
Be sure wings are thawed. Cut apart if necessary. Leave uncovered in refrigerator for several hours to dry the skin. If not, use a paper towel to pat the wings dry.

Dip chicken wings in melted butter (Optional, makes the coating stick better); shake in bag or press into bread crumb mixture until well-coated.

Place on the baking tray in a single layer with the skin side up. Can be very close together, using the low high cooking method the fat cooks off and they shrink.

Place tray on the lower middle oven rack and bake for 30 minutes.
Move wings up to the upper middle rack and increase the oven temperature to 450 degrees. Bake for 40 - 50 minutes, rotating the tray halfway through. WATCH THESE, they sometimes cook faster. Then remove from oven and let stand 5 minutes before serving.
Dipping sauce? 1 cup per 8

Because you are doing so many of these, you could do the slow cook the night before and the hot finish day of.

salad bar, for 100(use about 3/4 for 80)
Lettuce,leaf 8 pounds ready, 12-1/2 pounds whole
Carrots, chopped or shredded, 2 pounds ready, 1 quart 3-1/8 cups, 2-1/2 pounds whole
Celery, 2 pounds chopped, 1 quart 3-1/2 cups, 2-3/4 pounds whole
Onions, fresh chopped or green, 8 ounces, 1-3/8 cups, whole 8-7/8 ounces
Tomatoes, thin wedges or small cherry tomatoes, 4 pounds, 2 quarts 2-1/8 cups, whole 4 1/8 pounds
small croutons, 3-4 pounds
olives/pickles 3-4 quarts

PLUS 12 8 ounce bottles or 3-4 quarts (1 gallon) salad dressing- more if thick and self serve; ranch, lite ranch, Italian, fat free Italian, sesame or raspberry
