We have a4pm wedding reception. We have 200 guest. We would like to serve pulled pork on a bun. And bake beans , poatoe salad.mac and cheese. Vegetable relish tray,potatoe chips, we will have a popcorn and candy snack bar and cake. How many pounds of uncooked pork will need to buy and which cut is the best? And how much for the sides will I need? Thank you

Hello,
I am having a wedding reception on July 18th and I will be serving 150 people. My menu will consist of Baked Chicken, Fried Chicken, Green Beans, Corn, pasta Salad and dinner rolls along with Iced Tea and Punch can you tell me exactly how much I will need to buy in order to accommodate these many people. And also if you can help me with size cake that I will need to purchase cause we are working on a budget. Thanks, panicking Bride..

With this size group you have to provide a vegetarian entree, or at least a side dish that can serve as a meatless entree.

pulled pork, 1 pound ready to serve per 4
bun 5 buns or 12 slider buns per pound of meat
sliced onions, 8 pounds per 100
pickles, 1 gallon per 100

Have about 20 veggie patties (Boca or Morning Star) or a big crock pot full of vegetarian sausages. Field roast is a good brand.

Please consider adding 5-6 gallons of slaw

baked beans, 6 gallons
potato salad, 8 gallons, about 80 pounds of potatoes
mac and cheese, 1 pound dry pasta per 10, 1 quart sauce per pound, 1/2 to 1 pound cheese per pound

Vegetable relish tray, use the veggie tray page, do 2 times the classic relish tray and raw veggies for 100 (tray for 25 x 4.)

potato chips, 1 pound per 12, 1 pint dip/ salsa per pound

popcorn, 6 pounds seed per 100
candy snack bar, Usual is 1 pound per 4 to 6, depends on type of candy and age of guests.

cake control costs by having a grooms cake or kitchen cakes (sheet cakes in the wedding cake flavor). 1 sheet is 60 servings.

To make a surer success of your effort, make an appetizer plan, especially if you are grilling, and here is why:

A self-catered buffet is a real challenge to the organizers, and things don't always come together as smoothly as hoped. By planning and setting up an appetizer area or "nibble table" which is ready when the guests begin to arrive, the cooks and servers have time to complete the arrangement of the dinner buffet. This is especially critical if there are children among the guests, or there is a wait before dinner, as at a wedding reception.

This does not have to be complicated. Three items, plus a punch, or two if one is alcoholic, are sufficient. Typically, include a fruit tray, a cheese tray and an attractive dip or spread; or you can go with a dinner theme such as TexMex with chips, salsas, Texas caviar and guacamole; Italian with bruschetta or antipasto; maybe shrimps or other cold seafood, if budget permits.

One appetizer service area serves about 100 guests.

I do not suggest fried chicken unless it is purchased already fried.
You want 80 pounds quarters per 100. Several good wedding chicken recipes on this site.
