I'm having a hog roast for my wedding reception. It will take the butcher up to 2 hours to carve the pig and I'll hold the pork in chafing dishes before going onto the table (but make sure it gets to table within the two hours). Is there a chance the pork will dry out and how many pork servings will a 9 litre chafing dish hold? I need to serve 170. Thank you. |

About 25 servings per full size pan. Yes it can easily dry out, make pork broth or use chicken broth or BBQ sauce to wet down and cover tightly whil holding. Be aware it takes an hour to bring the chafers to safe temp, so start preheating steam pans early, with covers on.
