Hello, My friend is getting married in sept and the bridal party is cooking the food for 250ppl. The bride wants fried chx white and dark potatoe salad baked beans Mac n cheese mashed potatoes and gravy and rolls. Could u help me figure out how much food we need? |

Yes, but you need to get back with her and talk about a few things first. A party this size requires 3-4 people in the kitchen and 12-15 out front day of, to set up, serve and clean up this party. Most will not be able to attend the wedding, they will be working. I never recommend fried chicken at this size party unless it is purchased and delivered; if made ahead, it is soggy or dried out, and may not have been kept safely cold; if made on site it is messy, requires 2-3 cooks and commercial size fryers. There are several delicious chicken recipes on this site that can be made ahead, frozen and safely heated day of. www.ellenskitchen.com/bigpots/oamc/chix1.html Also I strongly recommend an appetizer plan and here is why: A self-catered buffet is a real challenge to the organizers, and things don't always come together as smoothly as hoped. By planning and setting up an appetizer area or "nibble table" which is ready when the guests begin to arrive, the cooks and servers have time to complete the arrangement of the dinner buffet. This is especially critical if there are children among the guests, or there is a wait before dinner, as at a wedding reception.
This does not have to be complicated. Three items, plus a punch, or two if one is alcoholic, are sufficient. Typically, include a fruit tray, a cheese tray and an attractive dip or spread; or you can go with a dinner theme such as TexMex with chips, salsas, Texas caviar and guacamole; Italian with bruschetta or antipasto; maybe shrimps or other cold seafood, if budget permits. Talk this over with your friend and then write back with your decisions, and I will help you with the food plan. |

I can't help with the pies, there are several different sizes of minipie crusts, suggest you get one, fill with dry rice, and measure. Ten just multiply.
baked beans- 3 gallons, 4 #10 cans, per 100
mashed potatoes Recommend you add slaw (2 1/2 gallons per 100)or a salad (see plan for 100 page) and possibly a green veg (22 pounds ready to cook per 100) to this heavy meal. Keep costs down, meat not necessary. Suggest: fruit trays (2 deluxe trays for 100, fruit tray page, plenty). 8 pounds cheese and 6 pounds crackers per 100. Some can be logs or spreads. Dips and chips or bread bites, 1 pound chips/bread per 12 1 pint dip/salsa per pound 6 gallons punch or lemonade |
