Im always doing summer parties for friends.. i was offered to to cater to a gala VIP event. However,im face with a challenge.. im doing 3 different buffalo style wings (how much pounds should i buy?) A red patato with string bean salad.. and i was thinking mini hotdogs with buns. |

Tiffany this is way too big a party to fool with unless you are talking commercial kitchen and (at least 150 experienced wait staff, if it is indeed a gala VIP event. Also, deep frying in this quantity requires commercial fryers and skilled cooks. You can post this on the catering forums of the commercial sites and see if anyone will offer advice.

You might also see if you can sell the hosts on drummies instead of all wings; much less expensive. |

catering a event for 400 Hi Ellen I'm making an assortment of finger sandwiches for a brunch for 400 teenage girls this weekend. It will be a short event. Food is not the main focus. Do you think this is enough food. (Light refreshments)

Bluntly, no, not nearly enough. See the tea sandwiches for 250 article on this site: www.ellenskitchen.com/bigpots/plan/recep2.html? Teen girls eat the equivalent of 2 sandwiches per person at tea parties even when they are not hungry. If this is brunch, the first meal of the day, they will be hungry. |
