I'd like my biscotti to have a more even width, and I find it hard to get the sticky logs as even as I'd like. Does anyone know if baking trays are sold in narrow widths and where I can buy them? Any help will be much appreciated. Thx |

Hi, Stan, A trace more flour, or refrigerating your dough in a ziploc before shaping, might solve the soft dough problem and avoid buying new trays. If your recipe uses oil, you might consider butter. kworks@mindspring.com, kitchenworks, has supplied me with several unusual baking pans and great service. A second choice:Bridge Kitchen Supply: 1-800-274-3435. But you might enjoy a trip to a good restaurant supply store in your own area, it is a treat for any cook. i just discovered. th is site. i like it . it might be too late to answered your question but i have a very old italian recipe they use metal ice cube trays (probably before your time) they are great! |
