I am making Orzo Salad (1 of 2 salads) for my sons wedding. 180 people. How long in advance can I make it & keep in zip-loc bags refrigerated? I am using grape tomatoes, fresh basil & cucumbers along with kalamata olives , feta, red onions. Should I leave tomatoes or cucumbers out until the day of?
( PS: I will be VERY busy the day of.) Thanks

48 hours ahead. Be careful not to overcook the orzo. If you don't cut the tomatoes, they will hold fine. Dice the cukes ahead. hold separate overnight, drain, then add. Make sure there is some oil in the dressing, it helps it not get sticky.
