I trying to make Apple crisp for 100 just have pie filling

This is very easy, you just put it into the pans and put the batter or crumb topping on top.
18-20 pounds pie filling
7 pounds sugar cookie mix cut with
1 pound butter or margarine
I add a couple of tablespoons of cinnamon and ground ginger, and sometimes cardamon or nutmeg to the crumbs, and occasionally raisins to the apples

What size pans and temp & time to cook?

These are the standard very large baking pans used in most food service kitchens, 18x26, cut 6x9. You can also use 9 9x13, cut 3x4.
Using a convection oven, bake at 350 F. for 30 minutes or until top is bubbling and lightly browned on low fan, open vent.
