We are doing a taco/nacho bar for a graduation party. We could have 300-400 people stop by and it is for 4 hours over dinner so I have 50 pounds of beef and 50 pounds of marinated boneless chicken breasts. (we may be eating it all summer, who knows). I will be serving both meats from roasters. What is the best way to cook that much chicken? I can cook it ahead of time and just heat it up for serving later. |

I would poach/simmer in covered roasters in the oven, chill, slice, rewarm in boiling chicken broth, place in covered roasters at 180 |
