Ellen, What are your thoughts on serving breaded/broasted potato wedges on a wedding buffet with brisket? I would include toppings in the condiment section with the BBQ sauce, mustard, & ketchup such as cheese sauce, sour cream, bacon, etc? Pros.....Cons? Many Thanks for your help~ |

People like them. They are quite difficult to keep crisp. Do you have a dedicated oven, preferably convection, to produce the necessary amounts? If you are doing toppings, what about simple baked potatoes, or mashed potato bar? The quality of either would be better. |
