Hi there Im from ireland and im opening a burritto stall. Im just wondering how best to keep pinta beans moist in a chafing set or bain marie??? Iv run a burritto stall before but the guy didnt leave the beans on there own he mixed them with the rice. Any feedback would be greatly appreciated. |

Keep them covered and make them juicy to start with, use a slotted spoon to dip out. Check out the borracho beans recipe on this site. www.ellenskitchen.com/bigpots/beans100.html Also, consider black beans as an up to the minute replacement. Are you going to serve corned beef burritos, or at least brisket burritos, as one choice? Good luck! |
