keeping pinta beans moist

Hi there
Im from ireland and im opening a burritto stall.
Im just wondering how best to keep pinta beans moist in a chafing set or bain marie???
Iv run a burritto stall before but the guy didnt leave the beans on there own he mixed them with the rice.
Any feedback would be greatly appreciated.

Keep them covered and make them juicy to start with, use a slotted spoon to dip out. Check out the borracho beans recipe on this site.

Also, consider black beans as an up to the minute replacement.

Are you going to serve corned beef burritos, or at least brisket burritos, as one choice?
