I am planning to cook polish sausages in water, drain them and slice into 3 pieces.....place the pieces into pans that go into a Cambro food warmer and hold them for a while until serving time. Will they get dry? Any suggestions? I also have 4 pans of cheesy potatoes that will go into the Cambros (I Have 2 of them). If I placed 2 pans of potatoes and 2 pans of sausages in ONE Cambro, would it help to keep the sausage moist? This is for Saturday.....June 27. Thanks for any advice you can give. |

As long as you preheat the cambro, they do not tend to dry out food. Tightly cover with foil before boxing. |

One more thing. Would batter fried chicken stay crispy in the Cambro or would it get mushy? Thanks so much for your help. I really appreciate it. |

Any crisp coating does not stay crisp when held under heat. |
