Using a Cambro food warmer

I am planning to cook polish sausages in water, drain them and slice into 3 pieces.....place the pieces into pans that go into a Cambro food warmer and hold them for a while until serving time. Will they get dry? Any suggestions? I also have 4 pans of cheesy potatoes that will go into the Cambros (I Have 2 of them). If I placed 2 pans of potatoes and 2 pans of sausages in ONE Cambro, would it help to keep the sausage moist? This is for Saturday.....June 27. Thanks for any advice you can give.

As long as you preheat the cambro, they do not tend to dry out food. Tightly cover with foil before boxing.

Do you think it's best to combine or just have potatoes in one and sausages in the other?

One more thing. Would batter fried chicken stay crispy in the Cambro or would it get mushy? Thanks so much for your help. I really appreciate it.

Any crisp coating does not stay crisp when held under heat.
