Catering approx. 200 people. How many lbs of boneless ham? How many pounds of boneless chicken breast? How much fried chicken? I will not have all 3 meats , maybe even one choice, just getting numbers at the moment. |

If serving two meats, do I serve the same amounts of both meats? 30lbs of boneless ham per 100 and 45lbs boneless chicken breast per 100? |

No. You use more than for one meat, but not double; caterers usually plan for 4-5 ounces ready to eat main meat plus 3 ounces second meat, per person. For example, 2 pounds raw beef per 5 people plus 1 pound ready to cook ham per 4 people. Discussed in detail in the bbq page. |
