We are feeding 60 people if everyone shows. We are having croissant sandwiches with ham, turkey and roast beef . Cheeses and condiments. I am struggling with the sides. I like a variety when I go to potlucks. I would like baked beans, broccoli salad, Caesar salad, potato salad, fruit salad and maybe a macaroni salad. Too much? I have read 3-4 oz of salad per person. Would that be of each salad? That's over 11-15 pounds of each side. I know how to figure the meat but the sides have me baffled.

OK, here is what I would consider for this nice assortment of sides:

baked beans, 2 gallons
broccoli salad, 1 1/2 gallons
Caesar salad, do 1/2 the amount for 100 on the plan for 100 page
potato salad, 2 1/2 gallons
pasta salad, 3 pounds dry pasta to start, plus add-ins

fruit salad, consider a fruit tray instead for looks and ease of storage and service; 1/2 the deluxe tray for 100, with some extra strawberries would be good; or 2/3 of the amount for 100 of one of the fruit salad recipes

Consider adding a couple of quarts of egg salad for any non-meat eaters, unless you are sure there are none.
