Rehearsal dinner for 50

Hi Ellen, I am going to be helping a friend prepare food for her son's rehearsal dinner. Could you please tell me if we have enough? Smoked spiral ham with bone in....15 lbs, Shrimp and grits... 30 lbs shrimp and 10lbs grits, Brocolli Casserole....2 full size chafer pans full, cream corn... 2 full size chafer pans full, 7 1/2 lbs toss salad, 3lb Salad dressing , 30lbs potatoes for mashed potatoes, 2lbs rolls, 4 gallons sweet tea, 3 gallons unsweetened tea and 4 gallons lemonade and 2 layer sheet cake 11x15. Do you have a really good southern style shrimp and grits recipe? Thank you so much!

Pretty good estimates! A few possible tweaks for 50:

Smoked spiral ham with bone in....15 lbs, plenty, 10 would do it, some left
Shrimp and grits...
30 lbs shrimp and
10lbs grits, half that would still be plenty, 12-15 pounds shrimp

2lbs rolls, at least 6 pounds, get good ones, and 2 pounds butter

4 gallons sweet tea,
3 gallons unsweetened tea and
4 gallons lemonade, all OK, have water also

2 layer sheet cake 11x15. only about 30 servings. Add cookies, bars, cupcakes?
