Hi, Ellen We are planning a graduation party where approx. 400-500 people may attend over a period of 5 hours. How much pork loin should I buy to fix in roasters for pulled pork barbeque? We will also be serving Italian beef, baked beans, potato salad, relishes, fruit, cake, etc. |

1 pound of lean boneless raw pork or beef makes 4 to 5 sandwiches. Since you are having heavy sides, you can count on 5. If you are serving over dinner time, you have to count on two sandwiches per person. So, between the two meats you can figure out your total needed meat. Remember that you only put out enough for 1-2 hours on the service table, and hold the rest covered in the oven with an internal temp of 160. |
