light refreshments before lunch

I'm serving 200 adults and 100 children - This is not lunch its a mini meal between breakfast and lunch - do I have enough food??
Bagel bar -
30 dozen mini bagels
7 - 1/2 lb plain cream chesse
5 - 1/2 lb lox cream cheese
3 - 1/2 lb strawberry cream cheese
2 - tofutti cream cheese 8oz each
Nutella
butter
jam
4- 1.5 lb sliced cheese mozzarela,muenster, cheddar
4 - 32 oz tuna salad
3 - 32 oz egg salad
4 - 32 oz white fish salad
2- 32 oz herring -
sliced tomato - how much for all vegetables listed
sliced cucumber
sliced red onion
olives
israeli salad _how much
green salad- how much
salad dressing - 2 kinds
4lb - hummus
12lb guacamolie
crackers

Dessert
cut fruit on - 2 18 inch platters
60 mini biscotti
40 mini croissants
28 mini cinnamon crumb cakes
28 zucchini walnut mini muffins
24 mini lemon bites
32 mini brownies
90 donut holes - choc and powdered
4lb choc iced sheet cake

Drinks
70 32oz bottled water
20 - 2ltr soda - mix diet and regular
iced tea
12 bottles seltzer
2 urns 42 cup hot water -

OK, let's see what you need for this morning snack. Would be easier if you told me the ages of the children- under 10 count 1/2, but over are usually full count. So I am going to use 250, but please increase at least 10% if it is all older children.

Bagel bar -
30 dozen mini bagels, make sure they are split
Have some kind of gluten free bread choice there and labeled
Put croissants here
7 - 1/2 lb plain cream cheese
5 - 1/2 lb lox cream cheese
3 - 1/2 lb strawberry cream cheese
Plan on 1 pound total per 12 , with this many kids I would increase the fruited

2 - tofutti cream cheese 8oz each, good
Nutella, 1 tablespoon per kid
butter, 4 pounds, some left
jam, 6 pounds, some left

Now for the spreads below, remember that 1 ounce per person for 250 people is about 16 pounds, and lots of people eat 2-3 pounces of spreads
4- 1.5 lb sliced cheese mozzarela,muenster, cheddar
4 - 32 oz tuna salad
3 - 32 oz egg salad
4 - 32 oz white fish salad
2- 32 oz herring -
So you will be cutting it close with this assortment.

sliced tomato, about 8 pounds per 100
sliced cucumber, same
sliced red onion, 6 pounds per 100
olives, 1 gallon per 100

israeli salad _how much 2 1/2 gallons per 100
green salad- how much, consider tabouli instead?be easier to serve and eat, 2 1/2 gallons per 100
salad dressing - 2 kinds, not needed if you switch salads
4lb - hummus, not enough, at least 8 pounds, and that just is 1/2 ounce per person. I usually do an ounce to an ounce and 1/2
12lb guacamolie- this is expensive, does not keep well, not similar to the rest of the menu. Consider skipping.

Dessert
cut fruit on - 2 18 inch platters
Not much, and the kids like it. Make sure you have at least 20-25 pounds

The biggest difficulty arises with this dessert plan for this many people. People remember what they did not get even more than what they get, so much better to have more of fewer items

60 mini biscotti, at least 200

40 mini croissants, put these with the bagels

28 mini cinnamon crumb cakes
28 zucchini walnut mini muffins
24 mini lemon bites
Have at least 200

32 mini brownies,
90 donut holes - choc and powdered
Have at least 200 total chocolate bites

4lb choc iced sheet cake
Either skip entirely or have a 2 layer full sheet cake if you are having 250 people

Drinks
70 32oz bottled water

2 urns 42 cup hot water - coffee? at least 1 cup per adult in AM, with 1/4 decaf
