Sharon, with 120 people, you have to plan on some non-pork eaters and a few vegetarians. So consider making all or part of the meatballs pork-free, and labeling, then add one small crock pot of vegetarian sausages (I like Field Roast) or patties/meatballs.
smoked pork butt You are looking at about 6-7 ounces ready to eat meats for party size portions.. Unless there is a strong regional inclination in one particular direction, I would imagine 2-3 ounces ready to eat smoked meat (I think that is about 1 pound per 4 if it is truly smoked, it shrinks remarkably.) 1 pound sausage per 4. 1 pound meatballs per 5 (1 pound raw meat plus add-ins if you make your own. 1/4 cup sauerkraut per person, as those who love it take quite a bit and some will take it even if they don't take sausage. 3-4 types of good mustard, good bread, some rye.
