Hello Ellen, Thank you for all your help. I would like to know how many briskets in numbers I would need to feed 130 people. Also I am serving sliced ham. Would you break it down as to how much Brisket I need and How much Ham. I will need to serve this many people. Thank you so much, MWalters |

Usually when both are offered at a self serve buffet, you plan for 4-5 ounces cooked beef plus 3 ounces cooked second meat per plate. In this case that works out to about 2 pounds raw brisket per 5 people plus 1 pound ham per 4-5. Make sure you have something that can serve as an entree dish for any non-meat eaters, there will be some. |
