Hello there I was ask if I could cater a Buffet dinner for 60 ladies and the menu items are chicken salad, Tuna salad both with crackers, meatballs, tossed salad with dressing,Finger food,fruit tray with dip. Tea both sweet and unsweet,water and my question is how much chicken salad and tuna salad do I need to prepare and how many crackers? Thank You |

I would do 12 quarts total, probably an 8/4 split chicken to tuna. 4-5 pounds crackers, but let me encourage you the ladies really like good rolls or bread sticks as a bread choice. Not sure what you mean by meatballs and fingerfoods, but if there are large amounts and it is buffet, you may need less of the two salads. |

Meatball I saw you suggest 1 lb= 25 meatballs so, I thought maybe 3 bags and one of the lady is a vegan and I thought about a Greek isles wrap maybe one small tray I will suggest that about the rolls. Thanks Ellen |
