I am cooking for an event this week and need to oven roast about 120 pounds of potatoes. I am wondering if anyone has pre-roasted potatoes and then re-heated the day of? I have hot boxes to transfer once heated and then chafing pans to keep hot. Meats will be grilled on event premises. I will be using the aluminum disposable roasting pans that fit in the chafers. Wondering if this is safe to cook before and refrigerate until morning of and then re-heat? I have heard scary stories about potatoes and aluminum foil causing sickness. Thank you in advance! |

Kristi, I don't know any way to make reheated roasted/baked potatoes taste good. If yo have this problem, please consider a potato casserole. |
