For an afternoon reception for 120 , I would definitely tweak this menu a little. People will be dressed up (BBQ sauce is drippy) and not hungry for a meal, and happy for a bit more sweet. 150 chicken fingers cut into 3 pieces, This looks unattractive; consider nuggets instead, 4 per person. At least 2 dipping sauces, 2-3 quarts each 12 lbs cocktail sausages in bbq sauce, 14 pounds, tiny meatballs are an option, consider a lighter colored sauce such as pineapple/orange or sweet and sour. 4 quarts sauce or gravy for very light coating. 5 gallons chicken salad, 4 gallons max, and consider you want small rolls or cocktail bread slices with this, at least 5 for every 4 people. You might consider 3 chicken and 2 seafood if you want to be a little more fancy, you will have some left 20lb Veggies for tray (carrots, celery, cucumbers, cherry tom, and broc); 12-14 pounds plenty. Maybe add a mixed gallon of olives and pickles? 20lb Strawberries and grapes for fruit tray, OK Suggest some definite expansions for dips and spreads. Remember a pound is a pint, and that means 3 pounds is only 48 tablespoons, barely one measuring teaspoon per person... For 120 people, 3 dips, I do 3-4 QUARTS of each 6 lb Various cheeses for cheese tray; For 120, I would not do less than 12, 1/2 could be logs/balls, or queso/hot dip, and/or a sweet spread such as a cream cheese spread with dried fruits, served with ginger snaps or lemon snaps as the crackers 6 lbs various crackers, OK
3lbs Buffalo chicken dip
4lbs Potato chips
Wedding cake and grooms cake
5 gallons sweet tea-8 If it is an adult crowd, consider reception level coffee- see the beverage planning page Hope this helps, you can write back.If this saves you time. trouble, or money, please make a donation, a dime or quarter per guest, to support this site. |
