11/13/15 		Feeding 100 people at HCC and the menu is:

Chicken and dressing casserole
Sweet potato casserole
Collards
Desserts

How many pounds of fresh collards are needed to feed 100 taking into consideration the other dishes?

11/13/15 		22-24 pounds per 100 ready to cook (eg, frozen), but 50+ pounds fresh. Huge amount lost in trimming and prepping.
