I am catering a bday party for 60 and they want short ribs. I have ordered 1 lb per person with a local butcher and have an amazing recipe already. Problem is how do I cook all of them. If I sear all 85 pieces first and braise them in a sauce which takes 4 hours, what type of pan would work best without having cooking them in batches which would take days! HELP! 128517; |

Braise in roaster in the oven. Room temp for 1-2 hours, , fat side up 300 degrees covered for about 3 hours (you could allow 4, but check them- you don't want mush), uncover, reset to 425, turn ribs over and cook for another 15 minutes minutes.
