I am cooking for 2 groups on Wednesday, and my son has a 2 hour doctor appointment right in the middle of cooking time. I would like to prep the potatoes 24 hours in advance. If I cube them and coat them in olive oil, will they oxidize??? Or, should I just put them in a bucket of water. They will be roasted in the same pan with carrots and chicken leg quarters. Love your site!!! I checked it for this question, but only found advice on freezing potatoes. Thank you so much for the words of wisdom!:) |

You can prevent the browning by submerging in water with some acid added- citrus juice, white vinegar- same amount as you would use to keep apple slices from browning. For your 2 hours, does not have to be refrigerated. Works better than the oil. |

That's 1 tablespoon per cup, in case it's been a while. or 1 teaspoon of fruit fresh per cup, if you have that handy. |
