Happy Holiday Ellen to you and yours. I am doing a 10 pound Ribeye roast for our Christmas dinner of 6 people. Want to be able to send home a lot of leftover for the kids!!! Would it be best to cut the roast into two pieces, of five pounds each? Or does it matter? Thanks for you help in advance. |

Forgot to say that it is with bone, I had the butcher remove the chine bone and then placed the roast back on the bone and wrapped with twine. |

I would not cut it in half- A nice slow roast, maybe with the reverse sear at the end, would give you a perfectly cooked roast and make a beautiful presentation. More about beef roasting in the beef section at the top of the big pots page. |
