Help cooking for 200 people

I am catering an event in 3 weeks for 200 guests. The menu is BBQ pork or chicken, baked beans, potato salad and a fruit bowl with cantelope, honeydew, strawberries, and grapes for dessert. Can you please let me know how much meat, beans, potato salad and fruit I will need to pull this off without too much left over?

Holly, all these foods are covered in the quantity lists in Big Pots. You want 1 piece of chicken and about 5 ounces cooked ready to eat pork per person. If it is self serve buffet, add about 10% to each amount- people take more when serving themselves.

A really good "sauce" for the fruit salad:
1 gallon plain yogurt
1 cup honey
1 1/2 tablespoons mace
2 tablespoons real vanilla extract.
Stir and let stand overnight in fridge.
