I would be making about 60 pounds of potatoes.
Preheat oven to 400.
Cut up, seasoned, oiled, single layers. Expect to take 35-40 minutes but start checking at 25- depends on size you cut. When tender (check in the middle of the pan), turn oven to 180. If covered, will soften, if uncovered, will get a bit chewier.
