Hi Ellen - thank you so much for your website; would appreciate your thoughts on the following. For my daughter's wedding we are looking to feed 60 for lunch. She wants a cool salad because we are in Arizona. No alcohol or caffeine. Here's my plan: Mixed greens pre-cut 3# Romaine 2# Carrots, fresh slices 3# raw Cucumber, fresh, sliced 6# raw Cheese, shredded 1.5# Croutons 20 oz Chicken, grilled, diced 3# Ham, diced 3# Peas, green frozen/thawed 2# corn 2# Tomatoes, cherry 4# Ranch dressing 1 qt italian dressing 1 qt vinaigrette 1 qt rolls 12 dozen butter 4# raspberry lemonade 4 gal water After lunch there will be a dancing/cookie reception for 1.5 hours for probably 150-200 people. We're thinking 5-6 kinds of cookies 12 dozen each. Strawberry milk, chocolate milk, and 2% - 2 gallons each. Ice water Thanks again, Laura |

Ranch dressing 1 qt- suggest do 1/2 low fat Ranch
rolls 12 dozen- you only need 8 pounds. Get good ones! Consider baguettes, Italian, French, ciabatta, etc
