how many pounds trimmed flat brisket,and pork loin smoked.I'm figuring 5oz servings of each

Usually, it runs 2/3 beef, 1/3 pork; and people do take both when both are there, so you would do a full 60 pounds boneless, 40 beef and 20 pork.
