I am hosting a dinner for 22 and the menu consists of Boneless Chicken Breasts cooked in Wine sauce with rice pilaf and greenbeans with a garden salad. I am not sure how much chicken and rice to cook for a buffet styled meal. Can you assist me

Hi, Cynthia, I would buy 8 to 10 ounces of boneless frozen chicken breatst per person. Most people will take 1 piece if they are good size, but you want about 20% extra for seconds. I use 6 to 7 pounds of rice for 100, so I would probably use a recipe with 1 1/2 pounds of raw rice. Rice is cheap! |

I think you need my grandmother's coq au vin recipe, which is baked in the oven and will hold or can be made ahead and reheated. I is better made with whole chickens- you would want 4 5 pound roasters or 3 6 1/2 pound roasters, cut in 8 pieces. I will see if I can dig up the recipe for you. For the rice, check out the many rice and pilaf recipes on this website- up to you. |
