Hi,
Do please look through the festive family brunch. Please consider skipping the pork sandwiches, messy and not needed with this menu. If you want another meat, ham or sausage would be a better choice.
1 large biscuit per person, 1/3 the recipe for 200 of the sausage gravy. 2 mini muffins per person- large ones not the best choice for this event. The breakfast casserole is what? With or without meat, potatoes, cheese, eggs? Quiche type? Veggies mostly don't get eaten, unless it is something like a spinach or broccoli souffle or green bean casserole. Meatballs 10 pounds, 3 quarts sauce. How about a hot fruit compote as the fruit? Instead of cheese and crackers what about cheese grits or grits and grillades?
For the beverages, the beverage planning page will do, unless your group is different than most. Usual also to have juice as well, 1 quart per 5. Does this help? You can write back. I am doing a fundraising campaign to remodel the kitchen and provide the changes you readers have asked for- please click the masthead at the top of this page to go to www.ellensbigpots.com and make a donation. Thank you. |
