Ellen--Was wondering if you'd have time to help with a quantity issue and maybe even an easy recipe for making iced coffee for an outdoor bridal shower? We're planning on 125 guests. Thank you so much.

Did you look at the frappacino punch?
www.ellenskitchen.com/bigpots/cocoa.html

The coffee syrup in this recipe is usable, you would just use all milk and no ice cream; but the punch is a very festive choice.

If you decide to brew, you will want 6 tablespoons coffee for each 3 cups water, then once brewed 2 cups milk. This makes a nice, not sweetened, drink. 5 tall glasses.

To do coffee concentrate:

8 ounces beans ground to medium fine with 3 quarts water, set overnight in the refrigerator. Strain through coffee filters or double layer cheesecloth
Add 2 teaspoons vanilla extract.
Stir in 1 1/2 cups heavy whipping cream OR 3 cups whole milk or 1/2 and 1/2
Add the sugar syrup.

This makes about a gallon.

To make the sweetener, boil up a cup of water with 1 cup each white and brown sugar.

You can write back. Does this help? I am doing a fundraising campaign to remodel the kitchen and provide the changes you readers have asked for- please click the masthead at the top of this page to go to www.ellensbigpots.com and make a donation. Thank you.
