Cambros (professional hot boxes) are the best choice to transport hot, and can be rented most cities. There are also instructions on how to use large ice chests on the potato bar page. Both are preheated and the food goes in hot. You are looking at about 14 gallons of cooked rice. Best way to cook, covered in the oven in very large pans- the largest that will fit your transport containers.
