I found a recipe on the web for a supposedly delicious coffee cake. Unfortunately it came out like a hockey puck. The dry mix included flour, margarine, sugar, spices and nuts. One cup of this is separated for use as toppings. The remaining ingredients, milk and baking powder, are mixed together and the flour mixture is then added. There are 3 cups of flour to 3 tsp of baking powder. Can someone help to trouble shoot this? Does adding the baking powder to the milk kill the leavening ability of it? My baking powder is still active. Thanks. |

Hmm. this sounds like a stupid recipe. Put the baking pwder in the part of the flour that is not for topping. If the milk is buttermilk, you might also stir in baking soda, but that would also work better if added to the flour. Most coffee cakes also have beaten eggs. If you look at the recipe for my better baking mix, the correct proportions of salt, sugar, fat and leavening are easy to estimate- good luck! |
