Hi Ellen,

I'm planning a taco bar for a graduation party. There will be about 300 people. Guests will be allowed up to 3 chicken tacos. I figured about 75 pounds of boneless skinless chicken breast. The chicken will be shredded. Do you think that will be enough? I'm also serving beans, fruits, &, veggies.

Shannon just go to the taco bar page and do 3 times the amounts for 100. The 75 pounds chicken is about right-

Since it is a grad party (teens), you might be wise to include the rice and beans suggested and also consider adding the nacho option; teens eat a lot.

I was also wondering how far in advance I could prepare the shredded chicken and rice?

Rice does not reheat well, best to do day of, can be held tightly covered in the oven at 200. Perfectly OK to prep chicken 2 days ahead as long as you chill in baggies not more than 1 inch thickness, and DONT stack then- or they don't chill safely.
