Please help- serving approx 100 people -need to know if my quantities are correct. I don't want to be short, nor can I afford to over do:
Ham 24#
Italian Beef 30#
Kaiser Rolls 144
Cheesy. Potatoes 26#
Broccoli Cheddar Pasta Salad 8#
Broccoli Crunch Salad 8#
Bacon Ranch Salad 8#
Tahitian Salad 8#
Cheese slices assorted 10#
Crackers 9#
Veggie Trays 3-18"
Veggie Dip 5-8z containers
Fresh Fruit Cups -100
Sauté Onions & Green Peppers for beef -qty????

This is a meal, and needs some tweaking. What time does the reception start and how long does it last? Write back.

Reception 3:00pm - until?
The kids want a very casual barn dance style party with a buffet style meal. I'll except any advice you have to offer.

Cheesy. Potatoes 26#(of potatoes, plus add-ins) for 100 people I would do this in 2 roasters, keeping in mind you can only plug in one on each circuit

8# is basically a gallon for most of these salads, I suggest a number of gallons by each:
Broccoli Cheddar Pasta Salad 8# 3 gallons
Broccoli Crunch Salad 8# 2 gallons
Bacon Ranch Salad 8# 3 gallons
Tahitian Salad 8# 2 gallons (none left)

Cheese slices assorted 10#- OK
Crackers 9#-OK
Veggie Trays 3-18"OK, none left
Veggie Dip 5-8z containers OK
Fresh Fruit Cups -100, OK but consider fruit trays, looks better, stores better and leftovers are more usable. See the fruit tray page.
Sauté Onions & Green Peppers for beef -qty 1/2 raw weight of meat

Consider doing a grooms cake or a partial dessert buffet. or kitchen cake (same flavor, but a flat sheet cake, serves 60) this allows a smaller wedding cake and save considerable cash.
