wedding reception sandwich menu

Hi,
I always love to get ideas from you and you've been great help in the past, thank you.
I'm helping a cousin with her 2pm wedding, mid June. It is informal and there will be 70 guests, mostly adults, some children. I have helpers, refrigeration etc and she's given me a menu - I may be able to change that a bit but am not counting on it.
Here's what I have so far, if you would please check my numbers.
60 Chicken salad sandwiches- small rolls, 6.75 # chicken, 4.5 C celery, 1.5 C parsley, 6oz relish, 1.5T lemon, 3C dressing.
60 Turkey sandwiches- mini croissants, 3# cream cheese with 2c cranberry mustard, 8# shaved turkey.
60 roast beef or ham sandwiches- rye cocktail bread, 6C horseradish mayo, 4# cheese.
Condiment trays-6 heads lettuce, 8# tomato, 1gal olives, pickles & peppers. 32 oz each yellow & dijon mustard.
She wants 4 salads! She said green, greek, potato & macaroni. I'm trying to switch to a green/greek combo and add a fruit tray
25 # each potato and pasta salads?
9# salad mix plus cucumber, cherry tomato, red onion, maybe olives
2-3 fruit platters for 25 ?
5 gal water, 3.5 gal each iced tea & lemonade
Simple syrup & lemon wedges

Sensible plan. You are headed in the right direction and the 4 salads are OK. It will be a few days- mom is in the hospital- but I will work on this for you.

60 Chicken salad sandwiches-

5 pounds deli slice meat

Condiment trays- suggest instead you do one classic relish tray from the veggie tray page, with just 16 ounces, pint each, of the 2 mustards and the horseradish sauce
6 heads lettuce, skip
8# tomato,
1gal olives, pickles & peppers.
32 oz each yellow & dijon mustard.

green, greek, potato & macaroni.
potato salad , 20 pounds potatoes plus add ins
pasta salads, 5 pounds dry pasta plus add ins. The pasta salad is particularly inexpensive and easy to make at home.

She might prefer the Greek Village salad, no lettuce, here, do 1/2:

Then do a Romaine salad, just 5 pounds, as the green salad, 1/2 the amount for 100 from the plan for 100 page
2-3 fruit platters for 25 ? Yes, and you can do these at a much lower cost, use the fruit tray page- about 6 bites per person.

5 gal water,
3.5 gal each iced tea & lemonade, I would plan on 5 gallons each-

If you have cake, do consider a coffee set up- grown ups really like coffee with their cake! You can do a small wedding cake (16 ) with a full sheet cake or 2 layer half sheet at a lower cost.
