Wedding for 160

Hello Ellen:
HELP

I'm getting married and we're having 160 people! More than we thought.
We want to have breakfast food buffet style.
Biscuits and gravy
sausage
bacon
eggs
hashbrown
tea
lemonade
water
bagels
fruit
What else do you recommend and how much of everything?
Should we do breakfast casseroles to make things easier?
HELP!

Ashley, yes, you will want to tweak the menu some. Coffee? Sweet rolls? First take a look at the tried and true festive family brunch on this site, and then write back if you like that menu. It is very doable, with much early prep, less same day. The menu above requires a great deal of hands on cooking day of.

There is also a great deal of equipment and supplies to deal with, as well as the food. The article on wedding dinners talks a little about this.

Also plan for the costs/arrangement of 3 people in the kitchen and about 8 out front day of to set up, serve and clean up the event, They will not attend the wedding, they will be working.

If you are NOT at a commercial level kitchen there are extra concerns.
