Pickles, Onions and Jalapenos for BBQ

We are planning a wedding BBQ for ~250 guests. Friends are taking care of the main food items (meat, beans, salads, etc), but we need to plan for the extra sides (pickles, onions, jalapenos). How much of each would you recommend? Also, my fiancé purchased 3 gallons of BBQ sauce. Do you think that will be enough? Thank you!!

I allow 1 gallon pickles, 10 pounds sliced onions, 3 quarts sliced jalapenos and 1 1/2-2 gallons vinegar slaw per 100 for sandwiches- increase slaw to 3 gallons if it is the main salad.
I usually allow 1 cup sauce per 5-6= 50 cups= 3+ gallons for 250.
