I need to make Fried Rice for 95 people for dinner one night at youth camp. There are 85 students (6th grade to 12th) and ten other adult leaders included. I will be using your recipe, Practically Perfect Fried Rice. I will be using chicken thighs for the protein. Can you please tell me how much chicken, eggs, rice and veggies I need to purchase? |

You will literally do 25 times the recipe. If you don't do the cubed ham, add that much more chicken to your list, and do the egg sheets made ahead and cubed up as you egg option. The best cooking surface for this much is a preheated full size griddle, lik at a diner; the most common error is to try to cook too much in one pan. 2 cups raw rice makes 4-5 cups cooked rice. Consider not using peanut oil or peanuts, as there is an allergy risk. You can do all the precooking ahead, just be sure to refrigerate if you are not finishing right away. |
