I am catering for 200 heavy eaters. People will eat at diff times for 3 hours during a band outside in the summer. The customer wants country ribs, Sausage , peppers & Onions, and Baked Ziti, with Broccoli Salad, Potato salad, a large fruit and veggie display, cookies and brownies. I figured 40# raw sausage, 65# raw bone in country ribs, 16# dry pasta to make ziti, 16# hamburger, 2 oz veggies and fruit combined per person, 50# made potato salad, 50# broccoli Salad, 20 dozen mini cookies, 4 hotel pans of brownies Can you tell me where I need to add or cut? Thanks |

Dawn, I think you will be short for heavy eaters.
40# raw sausage, 80 servings
16# dry pasta to make ziti, 2 oz veggies and fruit combined per person, at least 1 pound per 5
50# made potato salad, I usually do 35-50 pounds per 100, depending on the crowd and the rest of the menu- 8 gallons
20 dozen mini cookies, 4 hotel pans of brownies Hope this reaches you in time to help. |

ok the crowd is now 150 she does not want chicken I tried and now the ribs are boneless 60# sausage =120 servings 60# boneless ribs? Potato salad 64# baked beans 6 #10 cans with the rest of what you suggested or do I still need more meat for 150 ppl. |
